Mures Tasmania & Pooley Wines partner for a uniquely Tasmanian dining experience

Established Tasmanian family businesses Mures Tasmania & Pooley Wines, have collaborated to deliver the Southern Bluefin Carving Ceremony, a new dining experience running as part of Tourism Tasmania’s winter campaign, this Off Season.

Held in Mures flagship Upper Deck restaurant on Victoria Dock in Hobart, this event heroes the Southern Bluefin Tuna, a fish which is highly prized by both commercial and recreational fishers.

Freshly caught in Tasmanian waters by Mures very own fishing vessel Selkie, the event commences with an in-house carving ceremony, where a whole tuna is respectfully presented and sliced in front of guests by fisher Jock Mure, General Manager of Mures Fishing.

Guests are invited to taste samples straight from the frame, before experiencing a 4-course degustation menu prepared from the freshly carved Tuna. Known for its vibrant colour, texture, and rich umami flavour, each course showcases the versatility and freshness of this premium fish. This hook-to-plate experience is the signature practice of Mures’ restaurants.

Throughout the evening, every dish is paired with renowned Pooley Wines, presented by 3rd generation family member and Brand Ambassador, Matt Pooley. Each varietal has been carefully selected to complement the presentation of the Tuna and the flavours found in each course.

This dining experience celebrates Tasmania’s renowned seafood & viticulture industries and the time-honoured practice and knowledge of two third-generation Tasmanian families. This event will be held on the first Tuesday of every month of the Off Season, from May to August.

Event Dates. The Southern Bluefin Carving Ceremony will be held at 6pm on the first Tuesday of each month of the Off Season: Tuesday 5th May | Tuesday 3rd June | Tuesday 1st July | Tuesday 5th August

Price. $190 per person. Includes Tasmanian Southern Bluefin Tuna carving ceremony presentation followed by a 4-course Tuna degustation menu with paired Pooley Wines.
